The smoking at the beginning of the process not only adds the the smoky flavor but it also reduces moisture. <br /><br />The second big step is the fermentation process, which is repeated multiple times. I described how to order from e-dashi in the earlier post about katsuobushi.<br /><br />If that's out of your price range, you can either get a cheap western plane, which works fine all in all but doesn't feel quite as cool, or you could get a cheap Japanese plane ($43 and up) at japanwoodworker.com and then try to fit it upside down into a box. Look for one whose blade is set most like a real dezuriki, so that you have room to cut.<br /><br />Buying any of these will lead directly into the world of blade sharpening, a whole 'nother story . . .
